Summer Recipe: Jambalaya Foil Packets

This Jambalaya foil packet dinner is ready in about 30 minutes and is so delicious! Make it on the grill or over a campfire for a fun summer meal!

Ingredients (4 servings):

  • 1 pound andouille sausage, sliced
  • 1/2 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 ribs of celery, diced
  • 3 teaspoons Cajun seasoning
  • 1 cup instant rice
  • 1 cup chicken broth

Directions:

  1. Preheat your grill to 400 degrees (or start a roaring campfire!).
  2. Combine all of the ingredients in a large bowl and mix well.
  3. Use cooking spray to coat four square pieces of foil. Divide the mixture among them. Fold up two sides of the foil and fold over. Then curl both ends in to make a sealed packet. Place directly on the grill.
  4. Turn over the packets halfway through cooking.
  5. Cook for 20 to 25 minutes or until the rice is soft.
